Stuffed Zucchini with Lemon and Wild Rice
Otherwise known as courgetti, the seeds and watery mass is removed and packed full of slow cooked wild rice and lots of fresh mint, keeping this dish light yet satisfying. Served with a rich sauce made from ground cashew nuts and cashew milk.
