Miso Aubergine with Pomegranate, Crushed Peanuts and Coconut Yoghurt

A fusion of east meets west; sweet honey and miso glazed Aubergine blends well with sesame paste, earthy quinoa, and a plentiful supply of fresh herbs. This dish is brought to life with pomegranate seeds and a cooling coconut yoghurt.
