Chicken Katsu Curry

Crispy breaded chicken breast in a rich Japanese curry sauce, packed with coconut, chilli and ginger, with floral notes from the fresh coriander. Served with soft sticky rice and topped with crushed peanuts.

 

​Ingredients: Chicken breast, Japanese curry paste, coconut milk, basmati rice, panko breadcrumbs, ginger, coriander, dry roasted peanuts

Not included: Vegetable oil, egg

    Very good curry sauce, authentic flavour. The recipe is fiddly as the rice goes into a saucepan to start with and then into the oven which is a problem when your pan has a plastic handle! I had to transfer it to a casserole dish to finish the rice. I also added flour to the panne process which wasn’t in the recipe. Overall it was a tasty dinner.
