Buckwheat Grouts Risotto with Chestnut Mushrooms

This dish takes the Italian classic risotto, buts strips out the rice and replaces it with a grain called buckwheat. When the grouts are roasted and split they give off a lovely nutty taste that marries well with the mushrooms.


Ingredients: Buckwheat Grouts, Potato Starch, Garlic, Thyme, Parsley, Vegan Soft Cheese, White Onion, Vegetable Stock, Mushrooms
