  • 600g Diced Mixed Fish
  • 100g Plain Flour
  • 8g Dill
  • 800g Desiree Potatoes
  • 200g Unsalted Butter
  • 500ml Whole Cows Milk
  • 8g Tarragon
  • 120ml Double Cream

  • 1200g Diced Mixed Fish
  • 200g Plain Flour
  • 16g Dill
  • 1600g Desiree Potatoes
  • 400g Unsalted Butter
  • 1000ml Whole Cows Milk
  • 16g Tarragon
  • 240ml Double Cream

Recipe method

Melt half of the butter in a pan, add the flour and cook out for 2 minutes . Then slowly add the milk stirring all the time to prevent lumps, when all combined cook for a further 2 minutes to remove the flour taste. Then season.
